Oh, summer I am loving you and your fine produce! I can’t get enough. I am currently obsessed with grilled peaches. I make Josh grill up ripe and juicy peaches almost every day. I love eating them plain, with Greek yogurt, and in this Grilled Peach, Blueberry, and Goat Cheese Arugula Salad. This salad has been my “go to” lunch this week. Not only is it beautiful, but it is fresh, tasty, and easy to make! You should add it to your summer menu ASAP!

You guys know how I am obsessed with Ritz Peanut Butter Cup S’mores! It is seriously the best way to do s’mores: salty and sweet with chocolate AND peanut butter. :) I wanted to incorporate those flavors into a fun, gooey, marshmallow-y cake bar. I am in love with how these turned out!! Kevin is obsessed with them! He has declared it one of his all time favorite treats ever.

I can not get over these brownie bars. I literally had to get them out of my house as fast as possible because there was no stopping me from munching on them all day! The bottom layer is brownie then graham cracker, chocolate chips, marshmallow, sweetened condensed milk and finally a red velvet cookie layer! Seriously, make these. You won’t be sorry, lol! Enjoy!

As much as we feel we’ve let our garden go to “pot” this summer, with all of our travels, we couldn’t be happier with the harvest that continues to give and give! We feel very blessed this year, and most recently pulled baby red and white potatoes from the garden. I’m glad we got them when they were “babies,” since they are more tender and flavorful than the larger potatoes.
